Our approach to Food
At Zamzam our approach to food is very serious, organic, local, simple ingredients are used to create the best menus. Outside Marrakech we have a vegetable garden, citrus and olive groves. Seasonal produce is sourced daily from our organic garden or local markets which are full of fresh vibrant produce.
Organic marmalades and jams are made by Ilham when fruits come into season. The olives from our grove are pressed and provide us with first-pressed organic olive oil. Our local suppliers also include a local butcher who provides fresh meat and a fishmonger who provides fantastic fish from the Atlantic coast.
Dining & drinks
Our breakfasts are extensive including fresh orange juice, Moroccan pastries, eggs of your choice (Egg tagine is rather special) fresh breads and jams and yogurt and fruit. Request Bissara soup made from butter beans with Argan oil, or Berber porridge with honey, which all tastes so much better in the sun!
Lunch can be light or a gourmet affair especially if you choose to join us for a cooking class. Enjoy intimate dining at night under the palm or by the fire whilst savouring delicious Moroccan dishes created by Ilham.
Enjoy our Moroccan tea served on arrival and at 4pm everyday together with a selection of home made patisseries in the courtyard.
Relax on the roof terrace with a sun downer or in our comfy salon with a cocktail.
Children’s meals can be provided on request by our in house chef, and can make a grilled cheese or pasta for your picky eaters.
Ilham – Zamzam Chef
Ilham is and excellent Moroccan Chef. Her gentle personality and attention to detail create fantastic meals full of flavour. Ilham and Emma work together sharing ideas and ingredients. Ilham runs Moroccan Cooking classes at Zamzam which include a trip to the local market. She has been introduced to different ingredients, juicing and dietary requirements, she has completed a Raw and Vegan Cooking Course with John Bailey from Cashew Catering.
Our chef offers cooking classes at Zamzam either with lunch or dinner. Our culinary classes teach you the fundamental basics of delicious tangines, spice combinations for different meats and Moroccan Salads. The cooking classes start by discussing and choosing menus, followed by a trip to the local market to see and buy the local produce first hand. Classes are also available in Moroccan breads patisserie. Ilham will guide you through a tour of Moroccan food and it’s history.
Cooking classes for adults and children are available.
Zamzam Riad has also been chosen as part of Gourmet Food Tour which includes a number of riads. We have been chosen for our speciality ‘sea food pastilla with red pepper coulis’.
We provide a delicious and nutritious menu complete with carefully selected gluten free, vegan and paleo options. Vegan and vegetarian cooking classes can be arranged on request.
EXTERNAL CATERING & EVENTS
Emma and Ilham have extensive experience in catering and bar management. Should you need a food tasting for a wedding and event please contact us. Emma is also available as an events co-ordinator.
